Greek Yogurt Pancakes are going to bring a little extra protein to a totally awesome breakfast. They're almost creamy inside with just a hint of tang. Top them with butter and syrup and lots of fresh berries for a magical start to your day.

I've written many times on this site about the significance of pancakes in my family and my memories of my dad flipping pancakes on a lazy Sunday morning. This got me thinking about how kitchen magick is also an excellent way to honor our ancestors. It's a way for us to connect with our elders who are still with us as we learn by their side how to cook their signature dishes. And it's also an ideal way to keep alive the memory of our loved ones who have passed on.

Every time I make cookies or fudge, I remember my mom and how she would turn the house into a cookie factory at the holidays. Every time I taste kalua pig, I think of my grandma and all her backyard luaus. I never got to perfect my other grandmother's macaroni salad recipe before she died. Maybe someday I'll share it with you and tell her story.

They say we're not supposed to share stories on food blogs anymore, but we're looking for something deeper than just a recipe here. I believe in making connections, and food is an ideal way to do that.

What makes Greek Yogurt Pancakes so awesome?

These Greek Yogurt Pancakes are awesome on so many levels. Most importantly to me, they're delicious. They don't have a lot of flour, so they stay really tender and almost creamy. And there's just a slight acidic tang from the yogurt that brings and added element of flavor that I love.

Greek Yogurt is also high in protein, so these pancakes will keep you energized longer than usual. It's not just a straight carb rush that leaves you feeling like you need a nap at 10 am. I love butter and syrup on my pancakes, but you could also add berries or nuts or sliced banana. Whatever floats your morning boat.

How to make Greek Yogurt Pancakes

There's nothing tricky here. It's the usual method of combining dry ingredients, then combining wet ingredients in a separate bowl before bringing them together gently to form a batter. This particular batter is quite liquidy, so make sure you have your pan preheated and lightly greased before adding the batter.

These aren't going to cook up quite as thick as more tradtional pancakes, and they won't be as stiff, either. You'll need to have a little courage when flipping them. Commit to the flip and go quickly. It'll be fine. And if you splatter a bit of pancake batter, it's not the end of the world. Do I need to use Greek yogurt?

I would definitely use a strained, thick yogurt rather than a plain or natural yogurt that's a bit more runny. We're using twice as much yogurt as flour, so you need it to be thick enough to hold everything together.

What toppings would be good with these pancakes?

The sky's the limit. Honey, maple syrup, berries, bacon, whatever you like. Make it as healthy or indulgent as you want. That's the beauty of home cooking.

Ingredients

  • ½ cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking soda
  • 1 cup Greek yogurt
  • 2 eggs
  • ½ teaspoon vanilla extract
  • 2 tablespoon milk
  • Butter for greasing the pan

Instructions

  1. Put a medium skillet over medium heat to make sure your pan is well heated before you start cooking.
  2. In a medium mixing bowl, whisk together flour, sugar,and baking soda to combine.
  3. In a small mixing bowl, whisk together Greek yogurt, eggs, vanilla, and milk until well combined.
  4. Add the wet ingredients to the dry ingredients and use a rubber spatula to fold them together until just blended. A few lumps are not the end of the world.
  5. Add a small pat of butter to your hot pan and spread it around with your pancake turner. Scoop ⅓-1/2 cup of pancake batter into your hot pan. Cook for about 2-3 minutes, then flip quickly and cook for an additional 2-3 minutes or until brown and lovely.
  6. Repeat with additional pancake batter. Serve with your favorite toppings.
