This air fryer potatoes recipe is a great way to get your air fryer chops in tune. Roasted potatoesare a very simple and tasty side dish that goes with your favorite plant-based meals. Or serve them as an appetizer with green hummus.
It’s no secret that I love potatoes. I think it must be my Scottish heritage, but I’m definitely a fan. Of course, I think I have good company. A lot of people love potatoes too!
One of my new favorite ways to cook them is this air fryer roasted potatoes recipe. Even though they’re roasted potatoes, the air fryer adds a little bit of crisp, making it a perfect side dish!

Why is This the Best Recipe?

Here are the ingredients you’ll need for this recipe, including substitution ideas:
- Red Potatoes. I like using smaller red potatoes for this recipe. Give them a good wash and then cut these in half and cut the halves in half.
- Olive Oil. We’ll use just a bit to create a crispy crust on these potatoes!
- Dried Thyme. I love the flavor that thyme adds to potatoes especially when combined with the next spices.
- Poultry Seasoning. You can buy it at the store or make your own poultry seasoning at home.
- Salt and Pepper. Of course, these potatoes are topped with some salt and pepper. Add this based on your taste preferences.
How to Make Air Fryer Potatoes
It’s pretty easy to make roasted potatoes in an air fryer. Here are the steps:
- Cut the potatoes into quarters. Add to a bowl with water and soak for 10 minutes. Use a strainer to drain water. Then use a kitchen towel or paper towels to dry off the cut potatoes.
- Transfer potato wedges to a plate and drizzle olive oil over the top. Use your fingers to make sure each potato cube is coated in oil. Combine thyme with poultry seasoning in a small bowl. Sprinkle herbs over potatoes. Toss to coat.
- Transfer oiled/seasoned potatoes toair fryer(paid link) basket. Cook potatoes for 20 minutes, removing the basket and using tongs to “stir” the potatoes so they’re even cooked about halfway through. Cook an additional 2 to 3 minutes if necessary.
- After the potatoes are done, remove them from the air fryer and transfer them to a serving dish (or plates), and season with salt and pepper.
Step One: Prepare Potatoes
The first step is to prepare the potatoes. First, wash the potatoes and place them on a cutting board.
We’re going to be cutting the potatoes into quarters. To do that, cut a potato in half, then cut those halves in half. If some of the potatoes are larger, you can cut them down into smaller pieces.
Add chopped potatoes to a bowl with water and soak for 10 minutes. I’m borrowing this tip from my air-fried french fries post, because soaking potatoes in water helps reduce some of the potato starches, making a crispier finished potato.
Marly’s Tips
If you have time you can soak the potatoes longer, even up to overnight.
Once the potatoes have soaked, drain the water. Then use a kitchen towel or paper towels to dry them.
Transfer the dried potato wedges to a plate and drizzle olive oil over the top. Use your fingers to make sure each potato cube is coated in oil. Stir together thyme and poultry seasoning in a bowl. Sprinkle the potatoes with herbs and toss to coat.
Step Two: Air Frying Potatoes
Take a look at your air fryer basket. If it has a non-stick surface you’re fine. If not, give it a spray with some vegetable cooking spray. Next, you’ll want to preheat your air fryer to 400°F.
Transfer oiled/seasoned potatoes in the air fryer basket. Cook potatoes for 20 minutes, removing the basket and using tongs to “stir” the potatoes so they’re even cooked about halfway through. Cook an additional 2 to 3 minutes if necessary.
After the potatoes are done, transfer the air fryer fried potatoes from the basket to a serving dish (or plate) and season with salt and pepper.
How to Serve Air Fried Potatoes
Serve air fry potatoes as a side dish for your favorite recipes. Of course, they are great exactly as is, but adding a little bit of ketchup is always a nice touch.
However, I find air fryer roasted potatoes are great as an appetizer too. I love serving them with my green hummus, caramelized onion hummus, smoky hummus, and more.

Ingredients
- 3 pounds small red potatoes
- 2 to 3 teaspoons olive oil
- ½ teaspoon dried thyme leaves
- 1 teaspoon poultry seasoning
