LAFCO New York Winter 2023 Recipes

“Orange French 75”

Orange French 75 Ingredients:

  • Turbinado sugar and fresh ginger, for rimming glass
  • Orange slice, for rimming glass
  • 2 ounces gin
  • ½ ounce orange juice, fresh
  • ½ ounce lemon juice, fresh
  • ½ ounce orange peel simple syrup, recipe below
  • Champagne
  • Dried orange slice, for garnish

Orange Peel Simple Syrup Ingredients:

  • ¼ cup water
  • ¼ cup turbinado sugar
  • Peel of 1 orange, sliced
  • 1 teaspoon ginger, fresh
  • 1 teaspoon honey

Instructions:

  1. Add the orange peel simple syrup ingredients to a small saucepan and bring to a boil, stirring until sugar is dissolved. Remove from heat and let sit for 10-15 minutes. Strain out orange peel and ginger.
  2. Combine turbinado sugar and fresh ginger on a small plate. Use orange slice to wet the rim of a couple glass, then press glass into the ginger sugar.
  3. Add gin, orange juice, lemon juice, and ½ ounce orange peel simple syrup to a co*cktail shaker. Add ice and shake well.
  4. Double strain into prepared glass, top with champagne, and garnish with dried orange slice.

“Salted Caramel Bourbon co*cktail”

Salted Caramel Bourbon co*cktail Ingredients:

  • Caramel, for rimming glass
  • Maple sugar, for rimming glass
  • 2 ounces bourbon
  • 1 ½ ounces Kahlua
  • 1 ounce caramel sauce
  • 2 ounces cream
  • Whipped cream, for garnish,
  • Maple sugar and flaky salt, for garnish

Instructions:

  1. Add caramel to a small plate and maple sugar to another small plate. Press glass into caramel then into maple sugar.
  2. Fill the glass with ice, then add bourbon, Kahlua, caramel sauce, and cream to glass. Stir to combine.
  3. Top with whipped cream and sprinkle with maple sugar and flaky salt.

“Frosted Berry Mocktail”

Frosted Berry Mocktail Ingredients:

  • Sugar, for rimming glass
  • Blackberry, for rimming glass
  • 2 ounces redcurrant jam
  • 1 ounce rosemary simple syrup, recipe below
  • 1 ounce cranberry juice
  • Seltzer water
  • Sugared blackberries, for garnish

Rosemary Simple Syrup Ingredients:

  • ¼ cup water
  • ¼ cup sugar
  • 1-2 tablespoons rosemary, removed from stem

Instructions:

  1. Add the rosemary simple syrup ingredients to a small saucepan and bring to a boil, stirring until sugar is dissolved. Remove from heat and let sit for 10-15 minutes. Strain out rosemary.
  2. Add sugar to a small plate. Use blackberry to wet the rim of a co*cktail glass, then press glass into the sugar.
  3. Add redcurrant jam to the glass, top with crushed ice, then add in 1 ounce rosemary simple syrup and cranberry juice.
  4. Top with seltzer water and garnish with sugared blackberries.

“Molasses Whiskey Sour”

Molasses Whiskey Sour Ingredients:

  • Cinnamon sticks, to smoke glass and for garnish
  • ¾ ounce lemon juice
  • 2 ounces bourbon
  • 1 ounce pear juice
  • ¾ ounce molasses simple syrup
  • 1 egg white
  • Molasses, for bottom of glass
  • Cinnamon, for garnish

Molasses Simple Syrup Ingredients:

  • ¼ cup water
  • ¼ cup molasses

Instructions:

  1. Add the water and molasses to a small saucepan and bring to a simmer over medium heat, stirring until the molasses has dissolved into the water. Remove from heat.
  2. Carefully light cinnamon stick on fire until smokey, place on plate, then turn a coupe or martini glass over to cover the smoked cinnamon.
  3. Add lemon juice, bourbon, pear juice, ¾ ounce molasses simple syrup, and egg white to a co*cktail shaker. Shake well for at least 30 seconds until foamy. Add ice and shake well again.
  4. Add a drizzle of molasses to the bottom of the smoked coupe glass, then double strain co*cktail into glass.
  5. Garnish with smoked cinnamon stick and sprinkle with additional cinnamon.

“Spiced Orange Mocktail”

Spiced Orange Mocktail Ingredients:

  • Turbinado sugar and orange zest, for rimming glass
  • Orange slice, for rimming glass
  • 2 ounces orange juice, freshly squeezed
  • 1 ounce apple cider
  • ½ ounce spiced simple syrup
  • Cloves, whole, for garnish
  • Ginger beer
  • Dried orange slice, for garnish

Spiced Simple Syrup Ingredients:

  • ¼ cup water
  • ¼ cup brown sugar
  • 3 cinnamon sticks
  • 1 tablespoon cloves, whole

Instructions:

  1. Add the spiced simple syrup ingredients to a small saucepan and bring to a boil, stirring until the brown sugar has dissolved into the water. Simmer for 5-10 minutes, then remove from heat and strain out cinnamon sticks and cloves.
  2. Combine turbinado sugar and orange zest on a small plate. Use orange slice to wet part of the rim of a rocks glass, then press glass into the orange zest sugar.
  3. Add orange juice, apple cider, and ½ ounce spiced simple syrup to a co*cktail shaker. Add ice and shake well.
  4. Strain into prepared glass filled with ice. Sprinkle with whole cloves if desired, then top with ginger beer. Garnish with dried orange slice.
